• Flavor Profile

  We are aiming for a fruit-forward nose and flavor notes of citrus, caramel, and graham cracker with viscosity across the mid-palate and a deep, lingering finish of warm baking spices, shortbread, and stone-fruits.

• Mash Bills

  To achieve the desired flavor profile, Schofield's Flowers Spirits aims to blend 6-8 year high-corn and high-rye mash bills with 5-6 year wheated bourbon, creating a softer texture while retaining complexity and maintaining light to moderate tannin levels.

• Finishing Barrels

  Blended components will rest in secondary or custom finishing barrels to further enhance oxidation and harmonize flavor extraction objectives.

• Bottling Strength

  While we explore blended expressions at different proofing levels, we expect to bottle at an approachable range of 106 to 112 proof. Great for cocktails or sipping neat.
